Dr. Farthing received a Bachelor of Science in Home Economics in 1954 from Woman’s College. She worked for many years as a public health nutritionist before returning to UNCG to earn a Ph.D. in Human Nutrition and Higher Education in 1974. During her second career as a university professor, Dr. Farthing taught at Appalachian State University and University of North Carolina at Chapel Hill.
As an educator, the impact that she has had on the lives of nutrition professionals is immeasurable. Many of those whose lives she touched have also gone on to have very distinguished careers. Dr. Farthing’s contributions to the fields of nutrition and higher education are matched by her passion and determination to make a difference in the community, particularly at Family Services of Davidson County where she will be remembered forever.
